Glossary

Can't call really call this a glossary :-) But here is where I wil try to provide regional names and descriptions of certain ingredients that I use in my recipes. This section will be periodically updated as and when required.

Jaggery  - unrefined indian brown sugar rich in iron and minerals. Also has a lower glycemic index than refined white sugar. Ayurveda mentions the health bestowing properties of jaggery.

Kalkandu - Candy sugar. The ones mentioned in this blog are the unprocessed rock candy variety. The ones sold in the form of large, clear crystals are the refined variety and are generally said to be depleted of their medicinal profile.

Panamchakkara - Palm jaggery or palm sugar dervied from trees belonging to the palm tree species (Arecaceae) such as the date palm, coconut palm etc.

Ragi - Finger millet/ nachni/ kezhvaraku/panjapullu

Sambha godumai - Broken wheat of a particular kind. Biscuit brown in colour this is supposed to be nutritionally superior and have a low glycemic index.

Thulasi - Indian Holy Basil known for its medicinal value. It is specifically good in alleviating throat and cold related conditions in young children.
